Red Velvet Cake / Wedding Cake

Hello everyone,

Help this is my first wedding cake and am not sure on what I am doing. I read alot of posts and they say they do a taste test. So I thought I would do a taste test with the couple, the cakes i would do is a white cake with BC, a chocolate with fondant and a red velvet cake with BC or fondant.

Questions are:

1. Red Velvet Cake is it good and can I freeze it like other cakes?

2. Can I use Ameretto or other stuff as an extract for the BC or the fondant?

1. Sure. Think of it as a red chocolate cake. Personally, I love red velvet...it is probably my favorite cake. Since I've been decorating, I've had to use BC to cover it so I can decorate with it and used the traditional cream cheese icing as a filling. Unless it's for family or something.

2. I don't see why not. I've used everything from Lorann Oils to fresh orange juice in my BC. Not sure about fondant.
