I've had mixed experiences making cupcakes. Sometimes they are flat and sometimes they have height.
What is your cupcake preference? Flat or puffy? I usually see flat cupcakes as they are easier to decorate on a flat surface.
However, I do see those that are extremely high with delicious frosting. Regardless, how or what causes the result of a baked cupcake?
I think I like a little height on mine.

My cupcakes rise to the paper and then I do the frosting....They look beautiful, and people love to see them like that. Check out my pics.

Just guessing here, but I think it would depend on how much batter you put in each one.

I use the small scoop (smaller than ice cream size they sell at WalMart) and scoop 2 times into each liner. They rise to just the top....occasionally 1 or 2 go over but that is rare.

I think people like the tall cupcakes b/c there's more cake. I love the look of heavily decorated cupcakes, but I am guilty of scraping off the frosting. icon_redface.gif

I think it depends on what look you are going for. There are times when the flat works great for decorating, and times when you want the puffy look.

If you fill your cupcake liner 1/2 full you will get the flatter, more even with the paper, cupcake. If you fill it 2/3rds to 3/4ths full it will be puffy. icon_smile.gif

If you want more uniform cupcakes every time use an ice cream scoop. You can get different sizes and work with the one that gives you the look you want. icon_smile.gif

Good tip, I was thinking that - my ice cream scoop gets used for everything but ice cream (I even keep one seperate for ground meats when I prepare & freeze things).

You guys pointed out some great tips/advice. I love the look of blittle's cupcakes.

TexasSugar is right too about flat cupcakes being easier to decorate too sometimes.
