Need Help Fast - Diabetic Cake

My brother is getting married on Sat (someone else is doing the wedding cake - they booked her before I really got started decorating) and just asked me to make a cake to serve at the rehearsal dinner. Fine, no problem, except the bride's dad is diabetic.

I have never made a cake and icing for someone who is diabetic before. I know there are some recipes on this site, but I've never tried them and am worried about the taste. Is the icing one that can be decorated with? The cake isn't going to be anything elaborate. Probably just a decorated heart, but I am just not sure what to do.

Can anyone please help?

You can buy cake mixes that are sugar free..they aren't too bad. Honestly, if he is the only one who cannot have sugar you might could go ahead and make the cake regular and then bake a batch of the sugar free cupcakes from the mix? Then take a few of these for him?Just a thought.

Hi cakesbycathy. My dad is also a diabetic. I have bought sugar free cake mixes and frostings in the diabetic section of Kroger that were actually pretty good. I might use several of these kind of mixes for your cake because they bake pretty thick and will not look flat. You could experiment with the frosting or try the one from this site. I do not remember the consistency of the frosting I got from Kroger. I just know that it tasted good. Good luck!!!

The other thing you might be able to do is make a really pretty Angelfood cake and garnish with fresh strawberries and sugarfree whipped topping.

I made the "Fast & Easy Low Guilt Cake" by Nell and the "Diabetic Icing" by marknrox both found in the recipes on this site under "diabetic cakes". I've made four of them and they were big hits. The icing was nice to pipe with but I just kind of made a swirl design with my spatula to ice the cake with as I don't think I could of smoothed it like I do with BC. It did make a nice shell border.
