Weird Question...

Okay, I have a weird question. I made some class buttercream icing using milk last wednesday. I have lots left, and I need to ice a cake tonight....can I still use it even if the milk that I put in it expired October 8th?? The icing has been in the fridge since last week.

You might want to taste your icing and make sure it still tastes good. If so, you might not be able to leave it out long or it might sour. I would not want to take that chance.

I remember reading on Sugarcraft that the milk and sugar have some sort of reaction together that keeps it from spoiling?! That's why you can keep it in the fridge or freezer for so long!

sugar is a wonderful chemical that "cooks" biological material, like eggs and meat. which is why you can safely eat raw eggs that have been beaten with sugar in mousses, and why cured meats have been the rage for many generations. i assume that sugar would have a similar effect on milk, but it's more likely the case that pasteurized milk doesn't necessarily "go bad" right after it's "best before" date, and that you probably have a few days leeway so long as it's refrigerated. the best before date is a manufacturer's guarantee that it'll be fresh and drinkable until that date (and if it's not the store you bought it at will take it back and refund your money).
