Cookies On A Stick - Cookie Clueless!!

I have never done cookies on a stick. I have seen two different ways to make them. I have seen attaching the stick to the back of the cookie with candy melts or just bake the stick in the cookie. What works best for you? Also, can I use bc to ice the cookies instead of the hard drying stuff? Thanks so much for any help!!!

When I make my cookies (NFSC) I put the stick into the cookies before I bake them .. I find it easier to use the end of my flower nail and poke a hole into the cookie .. then kinda "screw" the stick up into the cookie .. turning it as it goes in ... If you get them up far enough they should be extremely sturdy .. and I would imagine you can use BC to frost them ... I have always used antonias recipe ... but thats because I bag them and dont want them to smear ... HTH!

I've always inserted the stick prior to baking. I just lay the cookie on top of the stick, and press down. I've never had a cookie fall or break off the stick. As for icing...the buttercream would need to be a crusting one, or it will smear if you plan on bagging them.

Thanks, that does help. I do plan on bagging them. So the crusting BC would work? What is antonias recipe? I did a search in the recipes and did not see it.

The way the stick goes into the cookie is completely up to you. However it works best for you, that is. You can either bake it in the cookie, put it in RIGHT when the cookies come out, or attach w/ Royal Icing or candy melts after the cookie completely cools. As for the frosting, I have seen people use BC, but you have to use a crusting recipe. You also won't be able to stack them and they'll mess up pretty easily. I like to use rolled bc to do mine w/ royal icing details. I love the way it tastes and it holds up very well! HTH.

I too put the stick in prior to baking. Just make sure that the stick goes at least 1/2-way (more like 3/4 of the way) up in the cookie and use a twisting motion to guide it up the dough. You'll have to roll your cookies pretty thick to make sure the stick will fit in the dough without poking out.

You could decorate with BC - but it won't give you a nice finish if you're trying to bag them. You can use a cookie glaze, royal icing, or fondant to cover your cookie. My new favorite way is using MMF - it's quick, pretty, and super easy!

So, is the NFSC recipe tasty? I have ordered cookies at a little shop here in town, and they were very pretty but hard as a rock. Any tips?

I don't particulary like the NFSC (I'll make and eat it if nothing else is available) but I really enjoy Penny McConnells recipe. It's very tasty in my opinion. It has loads more flavoring than the NFSC recipe.

As for sticks, I insert mine as soon as I take the cookies out of the oven. This way, when the cookies cool, they cool around the stick and "grasp" it so it doesn't move. I like to use skewers because they're skinnier than lollipop sticks and aren't as hard to insert. thumbs_up.gifthumbs_up.gif

Oh duh! NFSC, I have tried the recipe on this site and I didn't like it that much. I thought it was to buttery. I added lemon flavor to it maybe that messed it up.

May I also get a copy of Penny McConnells recipe, if you don't mind?

I put my sticks into my cookies prior to baking. I use Wilton's Royal Icing and add vanilla extract and almond extract to flavor it. I don't like NFSC. I use Martha Stewarts recipe instead. If you are going to bag your cookies I suggest a royal icing as any buttercream icing will get messy and all of your hard decorating work will be ruined. If you've never used royal icing it does harden but it's still soft enough to bite into.

Yes, I have used RI many times. Only once on cookies though. I am not very fond of it on cookies. I like the look just not the taste. I would like something a little softer. I think I may try the mmf that mconrey suggested. And I think I will try the Martha Stewart recipe.

I put the stick in prior to baking. That way I avoid burning myself trying to get the sticks in when they come out of the oven. I've never tried attaching the sticks to the back of the cookie, but I would think that would look kinda messy.

I love NFSC, it's the icing I'm having a hard time with. I don't like meringue powder, so still trying to find a RI recipe that I like.

Sorry! I haven't checked this thread in a couple days! Anyways, the link that fragglerock (thanks!) provided is the recipe halved. The full recipe makes enough dough for about 3-4 dozen 3" cookies. thumbs_up.gifthumbs_up.gif
