I'm taking a Wilton cake decorating course, and my assignment for tomorrow is the bring in one recipe of royal icing divided and colored. My recipe says it should produce 3 cups, but I only ended up with 2 cups. I followed the recipe exactly...1 lb powdered sugar, 3 Tbsp. meringue powder and 6 Tbsp. lukewarm water. It is so thick, I can barely stir in any color. I used my kitchen aide mixer and mixed for 10 minutes. Can someone please tell me where I went wrong?
