I may be behind the times on this one, but I discovered a way to get rid of hard, crisp edges that form sometimes around a cake when you bake it. Normally, you'd cut them off with a knife, and they crumble and take out chunks of the cake. I took my good pair of kitchen scissors and evenly and slowly snipped off those crisp edges, and it did not hurt the cake. I ended up with a gorgeously even cake! Then I leveled it with my cake leveler after those crisp edges were off. It worked great!! The cake I'm referring to is the Winnie the Pooh cake in my gallery....I couldn't be happier with the result!!

I have also used my kitchen scissors for that but I mainly use a syrup wash over my cakes and that does moisted them back up.
