Hope I spelled that correctly....have a client that wants me to make a nice assortment of Italian cookies for a wedding..and specifically requested these.
Anyone have a good recipe for them??
heres one that my friend from italy made..... they are good... I have yet to make them because I havent found the pine nuts or almond paste..... but her mother has put on the internet somewhere.. anyway, here you go.
7oz Almond Paste, grated
1/4 cup sugar
1/4 cup confectioners sugar
1/2 tsp vanilla extract
1/4 cup egg whites (not any more then that the cookies wont rise)
1 cup pine nuts, divided
1 pinch salt
2 Tbsp all-purpose flour
Preheat oven to 325 F. Line a cookie sheet with parchment paper.
Beat together the grated almond pasted, sugar and confectioners sugar for about two minutes. It should be "crumbly". Mix in the vanilla, now at medium speed, add the egg whites. Once all whites are in, mix at high speed for about 2-3 minutes then add 1/2 of the pine nuts, salt and flour.
then beat again on high speed for another two minutes.
If the batter isn't keeping everything together or too wet, then add flour, one teaspoon at a time, until it hardens up.
In a small bowl, place the remaining pine nuts. (You can chop them up if you want to, but if you do dont chop a lot) next you drop rounded teaspoons of the batter into the bowl with remaining nuts, and get the nuts only on one side. Place onto the baking pan with the nuts side up! Place them about 1 to 2 inches away from one another so that the cookies can rise and grow (almost double the size)
Bake 22 minutes or until light golden brown. Remove the cookies at once from the pan and place them on a rack to cool down..
I think it makes about 30 cookies...
