Cinnamon Roll Out Cookies?

Is there such a recipe, I looking for something that might taste a little like a cinnamon graham cracker.

You can try using your regular recipe, but substitute graham flour for half of the regular flour and add some cinnamon.

BTW graham flour is just whole wheat pastry flour.

I made cookies out of it this morning.......it is different, may be what you are looking for. Good Luck!



Cut Out Cookie
  
3 1/2 cups flour
2 cups sugar
1 1/2 teaspoons cinnamon
1 1/4 cups butter, softened
1 large egg
1 large egg yolk
1 teaspoon vanilla
1 teaspoon baking soda

Preheat oven to 350
Mix flour, sugar and cinnamon.
Cut in butter with pastry blender until mixture resembles coarse meal.
Beat egg and egg yolk and add to flour mixture.
Mix with hands to make a smooth dough.
Turn dough on lightly floured board and knead several times and form into ball.
Wrap in plastic and refrigerate for 1-2 hours.
Take half of dough and roll on lightly floured surface to desired thickness.
Bake at 350 for 8-10 minutes until lightly brown around edges.
Frost with favorite icing.
