Mmf Texture???

HI

When you make your MMF what should it feel like when it's done? Should it be pretty sticky, not sticky, a little sticky? I can't seem to get mine right lately! icon_cry.gif The first time I had it perfect and since then I haven't had much luck and am scared when I have to use it because mine is either too sticky or it starts cracking and doesn't want to hold together.
If anyone could help I would be very thankful!

MMF should not be sticky. I melt the MM in a large bowl. Then I dump in about 3/4 of the powdered sugar. Stir till it won't stir, it seems this varies a little from batch to batch. Sprinkle some of the remaining sugar on the counter and dump the mass out on to the counter. I use a bench scraper to start the kneading-keeps my hands out of the hot stuff. Once it starts to come together, grease your hands with a bit of shortening and knead the mass-carefully it may be still be hot.

At the beginning, you may need to generously sprinkle some of the remaining sugar over the mass. Don't over mix in all the extra sugar. Once it gets a bit smoother and only a bit sticky, clear away most of the excess sugar. Once it rests for a bit, you can knead in a bit more sugar, if needed.

Don't feel bad. I have only made it one time and it was a diaster. This stuff should file for federal aid from FEMA for diaster relief.
