Hi,

Would freezing spices such as cinnamon increase their shelf life or just ruin them?

..I thought I had read somewhere that freezing spices extends the life but I can't seem to find any info to back it up! Have you tried it yet, if so, what were the results?

Can I freeze spices?

From a scientific standpoint, freezing is the best way to retain flavor in spices. However, practicality is another matter. Because freezer space is usually at a premium, it is best used to store foods which have a shorter shelf life than to store spices which have a long shelf life.

And to add a bit of trivia to this topic, did you know that when you freeze something with cloves in it, the cloves keep getting stronger the longer th product sits? So, it is best to go easy on the amount of cloves that you use when freezing an item.

indeed, nuts and spices keep best in the freezer. of course, the best approach would be to buy in small quantities and grind your own spices, but of course just last night i bought half a pound of garam masala (no way i'm going to make my own, and it was the smallest pack in the store) for a recipe i want to try that calls for 1 tsp of the stuff. icon_rolleyes.gif oiy.
