how far in advance should I make a sponge cake for wedding

Hi- I am making my friends wedding cake in september. It is going to be a 3 tier cake. one tier is fruit, another is chocolate sponge and the third is lemon sponge. I was wondering if I can make both sponges a week in advance or would the sponges dry out too much. Can I freeze the sponges, and if so what should I wrap the sponges in to freeze them. I know that I can make the fruit cake well in advance but wasnt sure about the sponges. Any advice gratefully received. I have this big fear that if i make them even 3 days in advance they will dry out!!! thanks icon_biggrin.gif

You can freeze sponge cake after you've wrapped it and sealed it to prevent freezer burn for...maybe 6 months.
Half that time in the fridge stored the same way.

IMPORTANT
To Defrost:
Do NOT unwrap your cake until it is completely thawed. Otherwise your cake will sweat, and lose moisture.

Actually, Jackie, frozen cakes don't sweat while thawing. icon_wink.gif Instead, the moisture in the air around the cold cake condenses on it -- very much like the moisture in your bathroom air after you take a shower condenses on the the cooler surface of your mirror.

The moisture isn't coming out of the thawing cake, it is coming out of the air around the cake.

Either way, who wants moisture on the outside of their cake? So it is important to leave the cake wrapped while it is thawing. Then the air moisture condenses on the wrapper and you can throw that away.
