First Wedding Cake....

and I dont know where to begin..lol My SIL called me tonite and asked me to do her wedding cake...Okay, no problem....but..I have NEVER done a wedding cake before. She is renewing her vows in Mar and has let me know this wayyyy ahead of time..Thank God icon_redface.gif I have seen many wonderful wedding cakes on here..but I was wondering if any of you could give me some pointers. She says I can do the cake anyway I want, she is just going to let me know about colors, flowers..etc. I would be ever so greatful if someone here could help me. I am going to start working on learning that..(6 months until it happens) so I should be able to get a somewhat good cake..LOL I know I want to do a cake with the flowers coming down the side. I just need to learn a "simple wedding cake"(if there is such a thing..LOL ) Hope someone here can help....

The most important thing I learned on my first wedding cake is to make a denser caker if you're going to stack it at all and then make sure it's WELL supported. I had one end crush some. Fortunately, it was for a friend who was raving so much about the taste she wasn't paying attention to my panic!

If it's a big one--FREEZING IS YOUR FRIEND. I saved a lot of stress by doing up the roses and freezing them (though now I realize I could've just put them in an airtight container, they were royal) but the cakes can be frozen and I had people telling me that I should do this for a living.

The other thing I forgot, because I hadn't done a lot of cakes at that time is that I forgot to do TWO of one layer (the biggest one, of course) so AFTER I had it covered with fondant I realized this and had to fix it. So, remember to do TWO cakes of each size!!!

If you are looking for Simple I would suggest decorating your tiers in a solid color. Smooth nicely. Then get fresh floral (or fake-could practice with it and us it on the real one) And put them on the cake cascading down the side.

Things to watch out for with this design. Fresh floral-should be in picks or wrapped in plastic if it is laying or touching the cake-never know where it was.
Fake Floral-Wash well. I believe somewhere on this site I saw where someone fills up their bathtub with dish detergent and washes all the flowers a couple of times then hangs upside down to dry. If you are going to stick them into the cake, make sure you wrap the stems in Plastic wrap so the metal in them is not touching the cake.

I know you can do this! Another simple addition would be to add a ribbon around the base of each tier. Simple yet elegant icon_smile.gif

I forgot another "simple" way to do tiers is not stack them. Set them on their own stands at different heights. This way you don't have to worry about dowling if you dont' feel comfortable with it. You could even set them close enough to each other and have the flowers cascading from one to another.

I hope this makes sense. I can see it in my head but not sure how well I explained it.

I don't have much pointers, because the only wedding type cake i did was my Wilton course III final cake. But, i just wanted to say GOOK LUCK. You have a lot of time. I can't wait to see the pictures From noe until march. thumbs_up.gif
