I have made Colette Peters' regular recipe for fondant and it is great, ... very pliable, tasty, doesn't crack, drapes like fabric.

My step-son wants a tuxedo cake and wants chocolate fondant. I tried the recipe from the Cake Bible yesterday. Tastes great, like fudge brownies, but it is hard to work with. Cracks a lot. I added more shortening and more water but it is still not pliable enough.

Anyone out there have a really tasty chocolate fondant recipe that is very pliable and easy to work with?

This is my first attempt with a little 6" heart tux cake. It cracked a lot. Maybe it was because the pieces were so tiny, but still I think the chocolate fondant recipe I used from the Cake Bible was a bit too brittle for my liking. I even used less sugar than the recipe called for hoping it wouldn't be too dry.

Any suggestions?

The recipe here is for white chocolate, but I'm sure you can adapt it to semi-sweet or dark. Haven't tried it yet, though. Good luck.

satin ice makes a nice chocolate fondant. If you can find it locally
