Hi, I hope to get an answer today. I just emptied my bowl of freshly made MMF onto the saran wrap. It was awfully sticky. Should it be a little dryer? Like should I add more sugar? Otherwise, I fear I'll be using a lot of corn starch when I roll it ... but with no real experience with fondant, I don't know how it should be when first made.

icon_smile.gif not too fast !!!! did you try kneading it first ? it has to be given a good kneading before you can tell if needs more water ot sugar..
if it is still too sticky after a good kneading, then add more sugar... icon_smile.gif

Since you've already wrapped it, just leave it for 30 minutes to an hour. When you go to work with it, if it's still pretty sticky, add a little more sugar, then roll it out. Corn starch will take the stickiness out pretty quickly, but it also makes it less elastic, so don't use too much!

I would add just a little at a time.... It should be a little little sticky but not much....if it has to much suger it may crack after laying it on your cake....
you could use a powder suger to roll out instead of cornstarch.....until your sure you have the right texture
