If you would like a really glossy look to your royal icing (even fresh made) the trick is to put it under a flexible reading lamp with at least a 60 watt bulb in it. Position the light so the bulb is just a couple of inches above the icing. Leave for 10 - 15 minutes the dry as normal in a warm dry place for at least 24 hours. Your icing will have a wonderful gloss ideal for making icing runouts or flowers
