I'm just wondering how everyone is Australia works out their pricing? Do u go per serve? Or just estimate how much time it would take? And what prices do u use? Thanks I'm just starting :)
I have found that most people in Australia don't use a per serving quoting system as American's do.
I use a per serving price for the base cake (which is mud cake with fondant) depending on the number of tiers - a 2 tier cake has a lower per serving price than a 4 tier cake. I then estimate the time that the decorating will take had charge kind of like an hourly rate for that.
I'm in Australia. I have a two-tier (haha) pricing system)
Part A: Price per serving (not per tier). This is for the basic cake, filling, ganache and fondant, ribbon, fondant-covered board and simple piping.
Part B: Then I add on any other 'decorative effects' on a price-per-item basis. If you want a cascade of sugar flowers, gold leaf, piping your bridal lace over a whole tier and ruffles...you are going to be paying a cakeload.
This is the sort of thing you only can work out once you have enough experience doing these so-called 'decorative effects'. I'm talking about TIME SPENT and COST OF MATERIALS etc.
