Help Me Finding New Recipes Please !

AI'm a beginner and I'm already started getting requests from people to make them birthday cakes.. The problem is that I usually use the genoise recipe for all my cakes (vanilla and chocolate).. But it's really hard to use when it comes do decorating and fondant. And I don't really like the genoise ! It's not moist at all and it's very crumby, hard to work with and tasteless.. I've searched a lot for the perfect recipe but the majority calls for water or buttermilk.. (that I don't want to use it in my cakes..) and I don't want to separate the eggs also. So please I really need your help to find the perfect easy recipe for a fluffy sponge cake that I can use in all my cakes. Thank you :)

AHi Hela. I use Victoria sponge for most of my cakes. 175 gms S/R flour 175 gms caster sugar 175 gms butter 3 med eggs. I tsp vanilla (optional) Preheat the oven to 160 fan, grease and line two sandwich tins. Cream the butter and sugar together til light and fluffy. Slowly add the beaten eggs, mix until thoroughly combined. Add flavouring if using. Fold in flour. Divide mix into sandwich tins, bake for approx 25 mins. The traditional way to make this is to weigh the eggs in their shells then use the same amount of butter, sugar and flour. This is handy if you want to make a bigger cake or you haven't got medium eggs.

I don't know if you will be interested by this one but personally, I love it. The directions are clear and it doesn't take too much time, it takes about 40 mn.

Have you tried visiting recipe websites? I just started making cakes too and this site http://www.delish.com/recipes/cooking-recipes/sponge-cake-recipes#slide-1 helped me a lot. There are other sites that have great tips as well. It made baking and decorating much easier for me.

Both of us are searching for the same things. I hate genoise even it is very useful in making pastries. According to me,  the perfect recipe does not exist but I checked the recipe mentioned above and that is not bad. I think that of  Delices & Gourmandises is fine. Simple instructions but the result is satisfactory.

Hi,

I'm a beginner too, but really beginner specially for deserts. I was always afraid to cook or too prepare deserts. Now a days, we can watch so fancy video on facebook or instagram that the result of my work seemed some how disgusting. But I found a blog named délices et gourmandises, a french friend show me this blog. You can find really easy and simple recipe in this blog, if you speak french it's a good idea. I found some video on youtube in English. If you know any other blog or facebook page in English, msg me please.

Lots of videos are loaded from youtube, and their are many know nots willing to share their repertoire of bad recipes and techniques. When I started decorating I found myself doing lots of research for cake recipes and frosting or buttercreams. Rose Levy. is still my favorite . Sounds like you might not live in the US, I would recommend you ask bakers in your country for suggestions on books to study the art of cake and pastry baking.

Armelle_k, You should not be afraid. Life is about learning.  The more you practice the more experience you will get and you will be better at what you do. It is not like people in your family are going to give you hard times if you fail at your dessert preparation. Plus it should be quite easy, all you gotta do is follow recipes exactly like how they are presented to you.

Videos are great ways to improve cake making skills. If not, we can also always follow well established recipes to the letter when preparing cake. There is plenty available online now. We pretty much could find anything we want online.
