I use the Wilton gumpaste recipe, and whenever I try to create purple flowers, the gumpaste turns bright royal blue within a few minutes.  I use Wiltons violet paste. The owner of my cake supply store suggested using Americolor electric purple first and it would hold the red better when I add the violet but still no luck. Can anyone recommend a brand that will hold its color, or should I just make them white and lustre dust the color all over? Or would I have better luck with a different gumpaste recipe?  thanks for any help.

AI've had the same issue with Wilton's gumpaste and adding the violet color. However, to my surprise, when the flowers dried they were about the shade of purple I wanted. I'm still learning and couldn't conceive that something that was tinted a nice shade of purple, turned bright royal and dried purple, but it did. I'm sure they are many experienced people here who could tell you why that happened. I'd love to know the answer if anyone can provide it.

My suggestion would be to do a test and let it dry to see what your final color is. Hopefully, you may be pleasantly surprised as I was.

I found that using the purple dust in the shade I wanted to colour the gumpaste worked to keep it the right colour.
