Hi - I've fondant iced 3 tiers for a wedding tomorrow and I'm planning to stack the bottom two tiers before I go & stack the top tier which will has sugar flowers on it when I get there. I am wondering when is best to actually do the doweling & stacking? Should I do it now to let them settle or should I do it late tonight when it's cooler? I'm worried they will sag if I do it too soon? I'm in the UK and it's unusually hot & humid right now!
AI would wait but in the meantime you can put the dowels in your two bottom tiers and prepare the "glue" (ganache, buttercream, royal icing) which will be used to fix the tiers together.
Stacking takes only a few minutes if you have all your tools ready.
I prefer to stack the night before if I can , I stack and do my snail trail with royal. I would do all three tiers . When the royal sets it gives extra stability especially in hot humid weather it takes a little longer to dry. I live in Australia only five hundred metres from the beach . Humid is a specialty of mine.
I stack on site, and travel with the cake tiers unstacked, to avoid any risk of toppling :) Even though I use SPS, I am still a bit shaky when traveling with a stacked 3-tier cake!!
I like to stack on site, especially if there isn't much to do after the stack --- like, if all my tiers are fully decorated and I just have to pipe a border around each tier. In that case, I have all the dowels/straws in the tiers ready to go. Just makes me extra-sure I won't have something happen en route. However, if there will be a lot more to do after the stack, I stack as much as I can before I go. Example -- I once did a birthday party Spongebob cake with two fondant-covered cake tiers and a RKT/fondant covered pineapple on top, sculpted Spongebob characters and graham-cracker "sand." Too much to add after the stack to do at the party, so I did the whole thing before transport. Was a nervous wreck during the whole trip, but glad I could just drop it off and go.
