What I'm I doing wrong?!#!?  I use the WASC recipe for my cakes and it comes out great!  When making cupcakes the cupcake rises nicely in the oven and when I take them out to cool they shrink something awful!!!!  I have a wedding order and don't know what I'm doing wrong.  I test the cupcakes while in the oven and they bounce back and toothpick comes out clean.  ANY ADVICE??

it could be over beating or too much liquid.

Thanks, I'll try to use less liquid than what the recipe calls for.  I set my timer to 2 minutes to make sure I don't over beat my batter.  I did add an additional tsp. of flavoring but I didn't think that would cause a problem.  Maybe it did.  Thanks again for your response.  :)

two minutes seems like a long time for a boxed mix. I would barely beat it a full minute.

AI don't think you are overbeating. If you are using my *original* WASC recipe I always beat mine a full 2 minutes - even when I made lg amounts of batter in the 20 qt mixer :) I seldom made cuppies so I can't really say what might be the problem - sorry.

Yes, I'm using your WASC recipe.  I've made several cakes using your recipe and it's wonderful.  I'm just having the shrinkage problem with the cupcakes.

Have you tried using a different brand of mix?  "Pudding in the mix" type cakes tend to shrink somewhat anyway, so this could be the issue.  Are they baking to the full height of the wrapper?  If not, this can cause them to shrink too and even seperate from the wrapper.

AYou might be over filling the cupcake pans. Mine do this if I overfill (different recipe though).

I'm not overfilling the cups.  I'm only putting 1/4 cup of batter per cup.  The cupcakes rise beautifully while in the oven.  When they are cooling they shrink.  I have been using pudding in the mix.  Why would pudding cause the cupcakes to shrink???  This doesn't happen when I make cakes with the same mix.

AThis happens to be when the cupcakes are under cooked. Even if my a minute or two. I don't pull them out of oven they pass the touch text. You need to test the cupcakes in the middle of the pan too. Those take a little longer to bake.

You want the cupcakes firm but soft to the touch. Just like cake.

Are you removing your cupcakes from the tins as soon as they are out of the oven? Even just 1 minute longer in the tins can cause overbaking and therefore shrinking. You have to get them out of the tins quickly...

OMG, I saw somewhere on the internet that you should let the cupcakes sit in the tins for 5 minutes before removing them from the pan.  I've been setting my timer the 5 minutes and then removing them.  Thanks for the advise!!!!! :-)
