I've been using the WASC recipe for cupcakes and my cupcakes are rising nicely in the oven.  I test them to make sure they are done before removing them from the oven.  As they are cooling they shrink way too much!!  Does anyone know why this is happening??????  When I make the same recipe for cakes I don't experience this problem.  I need answers soon!  I have a wedding order to fill.  TIA

I don't know why this happens, but it happens to me, too.  I have found that starting the oven hotter than your normal baking temp and immediately reducing it when the cupcakes go in helps them to dome a bit and I've found they shrink less too.
