I'm assuming that Indydebi's buttercream works under fondant as well as filling? (I'm going to use Wilton MMF recipe) or buy Wilton fondant.

I'm going to test this recipe tonight or tomorrow... Is it best to keep it out or in the fridge?

Thank so much in advance!! :D

It will work fine under fondant.   Since the Indydebi recipe does not contain any real butter, there is no need to refrigerate the cake or frosting unless you have other perishable ingredients in the filling.

AThe sugar is a preservative. No need to refrigerate.
