Freezing A Fully Decorated Wedding Cake...am I Doing It Right?

I am making a 3-tier wedding cake for a wedding next Saturday (the 26th).  I will be out of town though, so we will be freezing the cake for about a week.  The mother-of-the-bride will pull the cake out to defrost, and assemble at the reception site.  I have never done this before, and am worried about the defrosting process.  I have read through the threads on here, but would like some advice specific to my situation...any help is greatly appreciated.

 

This is the inspiration cake.  They want a blue ribbon border instead of the pearls, and will be adding silk flowers instead of gumpaste ones.

My plan is to frost each tier (in bc), pipe on the vines, put the ribbon around the bottom, then put each tier in a cake box.  I will then wrap each box in plastic wrap and a plastic bag before putting in the freezer.  From what I've read, it sounds like the cake should be thawed slowly: moved to the refrigerator the day before the wedding, then put on the counter a few hours before the reception.  It should remained wrapped in plastic during the thawing process.

 

Here are my specific questions:

 

1.  Does all the above sound right?

 

2.  Can I put the ribbon on before freezing, or should the MIL do that when assembling?  She seemed nervous about that, so I thought it would be easier on her if its already done.

 

3. Will the brown vines bleed when thawing?  Is there a way to stop that? 

 

4. Am I missing anything?

 

I've never frozen a decorated cake before, so I'm a little bit nervous!  Thanks for your help!

Are you saying that the MOB is going to stack the cake?  That would scare me more than ribbon..............just saying.

 

As for the vines,  they should be fine.  I assume that they're BC, too?

 

I really think that the ribbon will get wet in the defrosting process--even when the defrosting is done properly.  I would definitely have her put that on day-of.

 

Box the tiers, wrap each box in a layer of saran & a layer of foil.  Freeze.  24 hrs. before serving, place wrapped boxes in fridge to defrost.  A few hours before serving, place wrapped boxes on counter to come to room temp.  Right before display/serving, remove cakes from boxes.

 

Now, if I were assembling BC tiers, I'd then put each unboxed tier back in the fridge for the BC to firm up, stack, and apply ribbon & artificial flowers.
