For the first time I have been asked to ice a cake in whipped frosting. Is there such a thing as a crusting whipped frosting that I can use a Viva to smooth out? If so can someone please tell me which pre-made brand or recipe to use. Thank you!!
AUse a pre made brand. It's called Richs Bettercreme or Frostin Pride. Sometimes Pastry Pride. It doesn't crust though. This is what most people mean when they say whipped frosting or whipped cream topping
If you can find Whip` n Ice also, it is same as Bettercreme, Pastry Pride. No, it doesn`t crust.
I use wilton "quick icer" tip to apply frosting to cake, then bench scraper on sides and spatula on top.
After that, to make it really smooth
What I do is: fill tall glass with hot water,
dip spatula there for couple of seconds
shake off all extra water and smooth icing.

If you have a Gordon's Food Service store anywhere near, you can get Rich's Bettercreme there. They sell it by the quarts and when you whip it use your whip attachment and beat it until it holds a stiff peak and it whips up double of what you poured in. Some say to use when it is frozen and just scoop some out, I find it tastes better when you can shake it up. After whipping you can freeze what is not used and actual hold time is on one of the sides. You may also find chocolate flavor there, mmmm yummy!
Aif you use the Rich's Bettercreme, be sure to add some wonderful flavorings to it like torani syrups, or any flavoring...taste as you flavor cause it can take a good amount and they are yummy. Marshmallow syrup is divine if you prefer something with a little taste but then you can go with rasberry, blueberry, etc. Experiment and have fun but pesonally I think it does need a great flavor booster. The chocolate is divine if you can find it but here in Cleveland OH they have discontinued sending it to GFS, That one is great on a chocolate cake and flavored with a malt flavoring. Have fun!
