I have a big wedding cake coming up fall of 2015 and I have never made this many roses before, I was wondering if it is cheaper to make like 800 centers or buy centers? If I buy centers what kind, and where is the best place to buy centers? If i make centers what kind of gumpaste to buy or best recipe to use? Any help would be much appreciated.

AWhen you say "center" are you talking about the actual cone that you'll make the rose on, with no petals, or the first row of petals already on it?

If you buy them, it's my understanding they are not edible.   How about using a Hersey's Kiss?   When I was teaching that's what I gave my students to learn the basics of making a rose :)  Are you sure you really need that many?  As others said, who big is this cake?

Maybe you could make larger roses to cut down on how many you need?

How do you make them? I just guessed on the number I have never made more then 20 roses. So I have no idea how many I'm going to need. It looks like maybe 200 at most, but when I make roses they are small ones, I cant seem to make big roses. So I may need more if I cant figure out how to make them. I think its because my centers are to small.

AHow big is this cake, and what design are you doing?

AI can make roses really fast, and I would give myself a full week to make 800, and that would be doing nothing else all day. There's no way you need 800 unless it's an enormous cake and it's totally covered.

AWatch this if you're having trouble making them bigger. Just keep doing the layers of petals using progressively larger cutters.

This is kinda like the cake I'm making. I'm losing one of the tiers but the roses will be set up the same.  If I wrong on the number I am open to suggestions. Like I said I have never done anything this big so I don't know how many I'm going to need.

I was just guessing. I think its no more then 200, but they way I make them I don't see how that is going to be enough.

AUse dum dum suckers. The sticks can go right into the cake because they are food safe.

I had a hard time making larger roses too but then I purchased Nicholas Lodge's crafts class - The Ultimate Sugar Rose and he gave some great tips for making large roses. I would highly suggest purchasing it! Good luck!

AThere's no way that you need 800 for that. It would depend on how big the tiers are going to be, but I've done lots of cakes like that and it wasn't anywhere near that.

Something I'll mention, too, is that for that look, with the flowers all touching and no spaces showing between them, you might be better off going with real roses. I don't like to use fresh flowers on cakes, but this is a design that works better with real flowers than with gumpaste. Gumpaste roses won't conform to the shape of the one next to it, so when you put them into the spaces between the cakes you're going to have a lot of open areas. If you have filler flowers or extra gumpaste petals you can fill them in, but unless you build each ring of flowers as the gumpaste is drying you won't be able to fill the spaces in with the roses alone. I did a cake like that once the had four tiers, probably about a 6-8-10-12, and it used something like 6dozen real roses, and they were more closed than I would have liked. So 800 is waaaaay more than you need.

to make a foam rose center i just cut out tear drop shapes and sand or squish out the cut lines -- or use hot foam cutters to make the tear drop shapes rounded in the first place --

the taller the center the bigger the rose --

yes the only way to do gum paste flowers with this design is to set them in place as you go so that they set up all up close & personal with the nest one --

and yes fresh roses as costumeczar recommend is a great way to go -- you can place them in warm water to get them to open or you can manipulate them with your fingers to get them to open up -- you can order them from the florist departments at costco and sam's --
