Sanding Sugar Question

AHi!

I made cupcakes yesterday and sprinkled them with sanding sugar. I was using a whipped vanilla frosting, a recipe I got here http://sweetapolita.com/2012/08/whipped-vanilla-dream-cupcakes/

After I had them all done, I put them in the fridge until we were ready to leave, when I pulled them out the sanding sugar had melted into the frosting. So I am wondering if anyone can tell me, was it the type of frosting? I used the same as Sweetapolita and it doesn't look like she had that issue. Was it the refrigeration? Is this common for sanding sugar (never used it before) and it's something you should do right before serving? Was it maybe the brand I bought (just something cheap at the grocery store as I have 10 wk old twins and going many places is a nightmare!)

Any help would be great, I'd like to use up some of the leftovers today and make some more cupcakes but I don't want the same thing to happen again.

I think it would be the frosting. Since all it really is is whipped cream, the sugar would have just dissolved over time from being in contact with all that moisture. 

 

It didn't happen to Sweetapolita because she is a great blogger and food photographer, and she probably added the sugar right at the last minute before taking the photos :wink:
