I use fondant for covering cakes.
I use gumpaste for things like flowers which need to be rolled very thin and need to dry throughly.
I use a mixture of 2/3 fondant and 1/3 gumpaste for things like drapes which I need to hold up but that I don't want to set really hard

Hope this helps
