hi everyone, ok so I have my first wedding cake consultation on Monday and I am slightly worried, I have full confidence in my ability to bake and decorate a cake but I have only done my own wedding cake and lots of cakes for family and friends, so here's my problem..

I obviously haven't got any photo of my own cakes to show them but I have loads of cake book but the book how there made, is that silly to take a book that shows how there made? or am I panicking too much ?

Also am I supposed to know how much each cake I am showing her how much it would cost?

Thank You!

You can show pictures of the cakes you've done even if they're not wedding cakes.

By using your books to help them find inspiration you'll be setting some high expectations. Can you live up to those expectations, skill-wise?

While you don't need to know off the top of your head what each cake in the book will cost, you do need to have a pricing structure in place so you can calculate the cost of what they want.

AYou need to show them pictures of cakes you have made otherwise the client won't know if she is happy with your skill level. I can show someone a book on how to build a car, but that doesn't mean I can actually do any of the things in the book.

At my consultations I tell the bride to bring pictures of cakes she likes. This gives me a starting point to custom design her a cake that fits her wedding best. I have my prices on my website so the client knows up front the minimum amount a cake will cost. Then depending on the pictures she brings I can point out any extra charges due to design. This helps with the custom designing part. If extras are not in the budget I can show what needs to be elimated or subsituted.

For the tasting portion I have 4 or 5 large bite size samples and 6-8 fillings and my buttercream. This allows the client to mix and match as feel like it.

Now's the time to invest in some styrofoam:)  You can practice by decorating 1/2 of the cake one style and of course the other 1/2 another one then take pictures of it.  Now just scrape off all that icing and start over.  By monday you could have at least 4 to 12 pictures:)   Or if you'd rather just buy lots of foam and make small cakes to keep around for showing off.  B'creamed cakes will last for months and fondant covered probably much longer before you need to change them.
