AHi everyone! , I'm new here but have a bit of an urgent matter. I have a customer who I'm guessing likes to bake because she is hiring me to make a grooms cake but is telling me all of the ingredients to use for my cakes and icings on her cake!! Basically telling me how to do my job..but okay, that's fine. If there's a recipe she likes, I'll be more than happy to use it for her. Now...here's the question..she wants a two tier cake..one tier chocolate and chocolate icing and the other lemon pound with a LEMON GLAZE?? ..she doesn't want fondant or anything else so how on earth Will this work?? For decorating purposes,I can't imagine using this? If anyone had any input for me,I would GREATLY appreciate it! Thank you!!!

well first off, i never used anyone else's recipes --

 

and i'm not crazy about the look of a chocolate iced cake sitting under a glazed pound cake-- but i would use some brown decor on the glazed cake and yellow decor on the chocolate one -- you could make it work -- i think yellow/brown and brown/yellow daisies would be pretty

 

but i think i'd make the lemon glaze opaque so none of the brown bits of the cake show through-- so it's a solid yellow -- and of course it needs to be a pretty shape--how big is it? could you use one of those awesome nordic ware pans--glory i love those

in fact that heritage style has the large muffin pan too-- i mean they're not cheap but it would be so cool-- if you did a large heritage then put the muffin size one on top of that -- killer --

 

full disclosure-- i've done this with the rose shaped muffin just sitting on top of a regular bundt cake--it's really pretty-- just glazed -- and it's got a ring of baby's breath to border each cake -- it's stunning and the glaze is just see through but it's not sitting on a chocolate cake either --

 

but there's some ideas anyhow

 

instead of flowers you could do 3-d scrolls too that stand up against each tier in the alternating colors

 

or use the bavaria or fleur de lis or blossom pan -- you could put something on each tip of the blossom pan-- like brown glaze as if each petal was tipped brown-- oooh that would be so cool and it would look masculine too

 

anyhow---

 

i should be a traveling salesman for nordic ware -- i love that stuff

AK8Memphis....that's exactly my thought!! I'm not crazy about it at all! The other thing is, she is not wanting any decos on the cake!! She bought a topper and that's it. I'm just very nervous about this one. The pound cake won't be baked inside of any kind of bundt pan. She wants just an 10" bottom tier and 8" top. I guess we shall see...:-) Thank you so much for your help!!!!!

no decor -- gulp --then you gotta happy client with a 2-tier brown iced and yellow glazed cake (yuck) :-D easy peasy cake -- 

 

you making the 8" two layers? now that's gonna be a little weird with the glaze

i don't think i have one and i hate myself for that -- i've made it several times -- 

 

it's really technical (not!)  glaze each cake on the rack -- plop the little one on top of the other--stick in the baby's breath :-D

 

and to complete the full disclosure statement -- i've only used the rose muffin one-- not the heritage one -- so there's that-- if for some reason it did not sit up there right --just stick in a stack of upside down paper cups or something to hold it up -- 

 

oh and you only need an 8" top tier -- good!  if you use a smaller size bundt pan it looks cooler nice & tall with a smaller footprint -- i know i've seen heritage in the 10-cup and in a smaller size but i can't find the smaller one today -- not to mention wilton has some nice ones that are half the price --

 

the one i made was one of the 3.5" rose muffins (from the pan that holds 6) sitting on either a 10 cup regular bundt pan or the smaller deeper regular bundt pan --
