Question About Just Whites

Hi, does anyone know if I can use "Just Whites" which are powdered egg whites instead of meringue powder? I have a can in my closet and I am running low on the meringue powder. Thanks!

Yes, you can exchange them. Meringue powder generally has the addition of some cream of tartar. You can add a bit to your recipe or skip it. It helps dry and harden the product, but is not necessary in most recipes.

i was in a bind the other day & used actual egg whites instead of Meringue powder & i was amazed how well it worked. i prefer not to use raw eggs but now i know if i really need too i can. icon_smile.gif
