AI'm trying a SMBC instead of ABC under my MMF fondant for a friend's son's birthday cake. If I have the cake decorated and refrigerated, how long before serving should I tell her to remove the cake from the refrigerator? (We do live in the Midwest where it's hot and humid right now. My fondant cakes always seem to sweat when frozen or refrigerated, too.)

AAnyone who refrigerates their SMBC iced and MMF covered cakes- any thoughts on when to remove from refrigerator?

AI think any frosting and fondant covered cake placed in the fridge and taken out will "sweat"/will result in condensation because of the difference in temperture.

Take out your cake out from the fridge about an hour before the party and let it air dry. The condensation will dry, but make sure you don't touch it to avoid fingerprints on the cake.
