AI've been asked to bring cupcakes to a Fourth of July party. I want to make the cherry cobbler cupcakes from the Cupcake Project website. She calls for frosting them with whipped cream. I'll stabilize the whipped cream, but my question is whether it will do ok in mid-70 degree weather for a couple of hours, or whether I should frost with something else. I have frosted cupcakes with stabilized whipped cream before and they held up beautifully, but it was winter.
AI am not sure where you are located, but here it is not only 70-90 degree temps, but super humid. I would opt for something else, unless they can be refrigerated and served immediately upon removing.
