How To Piping Gel

AStarting a new job where I will be decorating ice cream cakes using piping gel. I've never used much, I have always colored and piped my buttercream for images. Any tips or how to's on this? It is definitely different to work with.

1st of all I'm sure you know how *super! fast!* you are going to have to work on ice cream cakes.

Piping gel is very soft.  It takes almost no pressure to get it to flow out of a bag/tip.  When I wrote with it I always used a tip 1 or just *barely* cut the tip from a parchment cone - well actually I rolled the cone just a tiny bit loose allowing a smidgen of a hole at the tip..

Don't know if what you will use is going to come already colored but if not add tiny amounts as it takes color very well and you will over color it for sure.  One can always add a bit more it not satisfied but it's difficult to tone it down once the color is too strong.

Not sure once on a fzn cake if you can smooth it w/a spatula or not - think you can if quick enough.

AYes. I've done ice cream cakes before but not very much. I color my own piping gel, and I know how to do that. But sometimes piping gel can be tricky when outlining or filling in small areas. I'm wondering if I t would be better to put it on then smooth to avoid it looking too crazy. Especially with things like eyes.
