How Should I Assemble A Dummy Cake With Real Cake?

I need a little advice here.  I've never really made a dummy cake with a real cake tier before.  I'm making a dummy wedding cake for a friend because she doesn't really want a real cake.  She does want the top tier to cut for show and pictures.  I decorating the two bottom dummy tiers in fondant, and I was planning to stick them together with BC or piping gel.  I'm just a little worried about the top 6 in cake tier.  Would BC or piping gel hold it to the other tiers, even through transport?  Or do I have to put a dowel down through it?  Any tips or advice from the experts would be greatly appreciated.

AIt will be pretty top heavy, so I'd put the top tier on after you deliver. If you can't do that, then I'd just "glue" that tier on to the middle tier with royal icing, something that will really hold it well. I just don't care for center doweling unless I really have to, and I wouldn't unnecessarily jam holes thru dummies.

Do you already have the cake tier? I can give you the place that I order mine from if you need!  Also I think if your careful you can maybe use piping gel but to be safe I would put a dowel down through it, I know thats a pain...

Thanks Foamguy.  I do already have the dummy tiers.

 

AZCouture, would taping the cake drum to the bottom of my box help counter the top heaviness?  I make my own custom cake boxes for tall tiered cakes.

AI'm with AZCouture, I think adding the real tier after delivery is the best option, but if you can't due to the design, I would use royal to stick it on hard.

I presume you have a board at the base of the dummy cake - you could attach that to your box from underneath to give it some more stability in transport too.
