I did a beautiful basket weave cake.  Three layers separated the middle 12" plate completely cracked down the middle.  God was with me because I had another 12" and moved it over without destroying the weave just had to do bottom trim over.  But when I looked at second 12" plate it was sagging.  Has anyone had this trouble?  Are they making things so cheap that it's bad quality?  Does Wilton have a web site to ask them about their product?   If you have answers reply to [email protected].   thanks

I'm not sure I understand the complaint. Did the plate crack/separate or the cake? Or the weave? I've made many basket weave cakes, and I can recall 3 times where I had problems, and none were the fault of Wilton. I had heat, and icing either too soft or too stiff. If your basket weave is not tight enough to stick together or your icing too stiff where it will not stick, it will fall off or separate. Too soft and it will sag.

 

I have a lot of Wilton tools as I have been caking since 1990, and I rather like my tools. I'm not a fan of the punch line, though. So, which product is a problem?

I am not sure either by the description... Did you place bubble straws or dowels between your tiers?

OP: I can't answer your ? as  I haven't used any Wilton products for over 6 yrs  now. just wanted to relay this: once many yrs ago I made a wedding cake - if I remember right it was 4 tiers - and had a plate crack in 1/2.  And I think it might have been  12"er too :)  I had finished the cake the day before delivery and went home for the night, leaving the cake set up in my shop;  in the morning when I went to deliver it I found the broken plate.  Was able to transfer the tier to another one - just as you say you did - and didn't have any further problems.

By any chance are your plates old?  Like really old? :)

I think you are speaking of the board between the 2 cakes. If this is what you are, then you can us 2 or even 3 cake boards. If you use cake boards turn so all 2 or do not have the corrugation going the same direction.  I suggest get 1/4" for this and 1/2" for heavier cakes. All you have to do is cover the boards and also be sure you have enough dowels also, if I use an 8" cake going on top of a 10" inch cake.  I always use just a few less than the size of the cake. For an 8" I would put 7 dowels in.  Good luck!
