ADoes it make a difference if you use instant pudding mix or regular pudding mix when adding it to a cake recipe?
ATo me it does. I put it in almost every cake I make. It makes my cakes do moist. And adds a little extra flavor. I LOVE pudding in my cakes.
I keep reading American ladies talking about "pudding mix", what is this stuff, I've never heard of it in UK?
Jello (the brand name here in the US) makes a mix that you add milk to and it is either "instant" (add milk and refrigerate) or "cooked" (add milk, bring to a boil, refrigerate) and end up with pudding... Many stores also have other brands of pudding mix as well...
I prefer to make my own from scratch still... Especially since I really only like chocolate and vanilla...
I do not use it in my cakes though... so I cannot attest to any of that...

So is it used as flavouring or to thicken a box mix? I'm a scratch baker too and though I've heard of box mix we dont have "pudding" as far as I'm aware.
I think I've got it, we call it Angel Delight or a similar thing. I cannot for the life of me conceive of any occasion it would go in a cake. Most interested to hear how this would work.
yes, it is a box of jello instant pudding mix. you add it dry. I see a lot of from scratch cakes using it now too. Can be store brand also.
It does not have to be Jello brand instant pudding. I use Wal-Mart brand as it is less expensive although I bake from scratch so I don't use either one.
AVanilla or cheesecake flavor pudding added to white or yellow cake mix. Chocolate pudding added to chocolate cake mix and red velvet cake mix. Pumpkin spice pudding is popular in the fall. I think they add it to spice cake mix. I think people use many different combinations. It doesn't change the color of the cake that I have noticed. It makes the cake more moist and dense.
It's easier to just buy box cake mix with the pudding. They are moist and fluffy. Why do you make a scratch cake and then add box of chemicals.

AI forgot to mention that if you add a small box of instant pudding to a cake mix you should add an extra egg OR a little extra oil. I've seen it both ways. I'm sorry I forgot to mention that earlier.
AIt makes a big difference using instant pudding versus cook and serve pudding.
Since I was out of instant I tried the cook and serve pudding instead in my cake batter. The cupcakes came out totally dry. It tasted horrible.
Never substitute cook and serve pudding for instant pudding in cake mix.
