2 Weddings Same Day! Please Help!!!!

AOkay so a friend of mine is getting married and I'm a bridesmaid and she asked me to do the cake for the 14th. I agreed. I already had a wedding booked for the 28th and now my friend has changed her date to the same day!!!! I couldn't tell her no.. I should of but I already stupidly said yes... I was wondering if I could decorate her cake and keep it refrigerated for 5 days if it will still taste okay? And will the colors bleed? She wants like a pink/peach color and navy blue accents... I figure it's fair to do this with her cake as she changed the date on me with short notice and I already have a big wedding to do the same day.. Also, I have already baked and froze the cakes in half sheets and was going to cut into 12" 9" and 6" rounds to feed 100 when I was ready to decorate. But I just noticed the width of my cake doesn't reach 12" like I thought.. Would it affect the support if I just cut two half circles for the bottom layer? I am using bubble tea straws and plastic boards for support... Please help I'm new at this and these are my FIRST weddings ever and I'm totally freaking out!!!!

Would it be possible for you to do the cakes together? Fill one night, cover the next? I have all of my 'fun' decorations made a week or two in advance so the final night is just putting the proverbial icing on the cake! It doesn't matter if rounds are cut in half and put to make a whole circle if that is what you are asking?

AWhen I was doing wedding cakes full time I always had two weddings per day. If I didn't I was afraid I'd lost a order sheet.

I'd bake everything on Sunday and Monday using the correct size pans - never cutting rounds out of a sheet cake. That will make your job harder. Torte and freeze. Two days before delivery , remove from freezers, apply wash, fill and prepare for settling. Day before delivery, apply bc and fondant if using, decorate and partially stack. I use SPS only as my support system.

And no you can't let a cake sit for five days before the event. Just no.

Maybe you should back out of doing her cake. Are you going to be needed the morning of the wedding to dress, hair, photos etc? How are you going to deliver two wedding cakes and get ready to be a bridesmaid all in one day? And will you need to be available for a rehearsal the evening before? Having agreed to make the other person's cake, what will you do if something happens to it?

 

Given that these are your first wedding cakes, I can only see a ridiculous amount of stress for you.

 

Talk to your friend now, and back out of something - I can't see this ending well, sorry.

Even though I have often done at least 2, sometimes 3 wedding cake in one day I never was actually IN any of those.  That truly puts a different slant on your situation.  I agree w/mcaulir.
