AI've never froze a pastry before. But years ago when my mom married my dad, she froze their anniversary tier and it was very fresh a year later. If they have frosting that would have to harden first. Proceed to wrap in wax paper, then use freezer plastic wrap and wrap it very well, lastly, place in a couple of Ziplock freezer bags. I've done this not with a pastry in my deep freezer which sits in my kitchen in my apartment and I'm on the upper level and I've NEVER had an issue with taste, quality, or anything. I wouldn't use the freezer part of a refrigerator because I go in and out if there way more thn my deep freezer.

I hope this helps...
