Can I Refreeze A Cake ?

I generally freeze my cakes after baking for easier carving and crumb coating.  I need to decorate a cake on Thursday for Monday because I am going out of town for the weekend.  Can I freeze the cake, carve, decorate & refreeze ?  or will refreezing hurt the integrity of the cake ?  I would really appreciate any advice or experiences ya'll have with this.  Thanks in advance !

AI wouldn't do it for a paying customer, that's for sure. If it's for you, try it and see what happens.

I've had to freeze decorated cakes and with those, I have a "one freeze" rule.  Unlike my usual process, I only chill those cakes enough to level and torte them, rather than freeze them overnight.

 

I do think a second freeze can make the cake soggy and I found that out from a family cake...............

Hi!

 

I have baked cake layers and frozen them. Then taken them out filled and refrozen them. Taken them out again, thawed them, covered with smbc and fondant and decorated them. It turned out just great. This was for a family party, but if I was doing it for someone else I'd probably fill the cake first and then freeze it. Take it out two days before it was due, let it defrost slowly in the fridge and then cover with smbc/ganache and proceed as usual. Have done this as well. This too has turned out great. I'm not sure but I guess it depends a little on the recipe you use for the cakes to ensure that the layers don't become too moist. I almost always use recipes that start off by beating butter and sugar together.
