AIf i was going to do that, I would do the various strips in the colors, texturize them with a dogbone tool or texture mats, then take a knife or a tool that you use for clay and cut off a thin strip of the surface here and there and bend it back like peeling paint does. Then paint the area that the peeling paint section covered with brown food coloring to make it look like the wood underneath.
AAnd you could always use a creme brulee torch to darken some areas by burning them to give it the weathered look. Because burning things is fun.
