How To Make Liquorice Tasting Fondant ?
Decorating By Slice of Heaven Updated 7 Jun 2014 , 3:47pm by cakebaby2
Hi, this is a request from a customer and I don't know what to do. She wants me to make a cake in the shape of a camera (so mostly in black fondant and not using the packet sweets) and would like the fondant to taste of liquorice. Can I buy fondant in liquorice tasting form or how can I adapt the black fondant to get the taste of fondant. I have never used liquorice food extract and think that it would make the fondant too pliable to work with ! Alternatively, has anyone used Liquorice Petal Dust ? Can anyone help ?
i've used black dust-- i've never made licorice fondant--i wonder if lorann oils has licorice--i tell yah there's anisette, a licorice liqueur... could splash the cake with it for sure--probably would not flavor the fondant without ruining it--
they do!

plus you can go to the lorann website itself--they sell from there too--plus even your local cake store might already have it
You can buy licorice powder. I use it is ice-cream. Have not used it in fondant but do not see why it would not work.
Hi and thank you for your reply - I live in the UK and cannot find liquorice powder anywhere. Delivery from US is too expensive. One site quoted 8.95 for delivery only !! I will continue looking but thanks for response - I think you are right the liquorice powder should be what I need.
Thanks for your replies - I think an oil will make the fondant too wet to work with but appreciate your help. Btw I live in the UK so ideally would like to order or buy something a little more locally. Just wanted to know what people on the forum have used in form of liquorice and how it has been used. Cheers .
Maybe try ground anise? It has a licorice flavor. I would try it first and make sure it isn't overpowering though.
AQuick google search bought up lots of suppliers in the uk of liquorice powder.

Maybe it's not the right stuff?
AHi there! There's a thread here on CC that is mostly for UK bakers. Maybe there is a member there that knows where you can purhase or order the powder/flavour that you're looking for locally or atleast closer to home? Good luck :)

i flavor my fondant with oils--it's a concentrated flavor so it works great for me
Store bought fondant? It won't make the fondant sticky? Or do you mix it to homemade fondant while making it? I add flavoured oil when i make MMF, and it works great. But never tried adding it to store bought fondant? :)
I add flavours to fondant with no problem, I usually use carma, (store bought).
I use a food-grade essential oil, which is super concentrated. It only takes 1-2 drops per pound to get a nice light flavour.
I can't imagine it would make the fondant sticky or too pliable, even if you were using a typical extract, if it does, just knead in some confectioners sugar.
Wow - thank you all for your suggestions. We will definitely look into this. Cheers. We have only been making cakes since Oct 2013 and only doing it for friends and family and friends of friends so very low key, but we are learning all the time and have posted our few cakes on FB as Love 2 Bake by Dawn and Chris. We will post a pic of the finished Liquorice flavoured camera cake in a few weeks time, when completed to show you all how your contribution has helped. What a great website this CC is ! Lots of good advice. Big thank you to you all !
Here is the finished camera cake with in liquorice. We decided to add some liquorice powder to the fondant but found that it needed a lot of it. The taste was ok. However we also added a little black food colouring as the black fondant looked a little grainy once liquorice powder was added. This worked really well. We made the camera strap out of a Liquorice catherine wheel (3 lines platted together). The buttons on top of the camera were also liquorice wheels rolled up and painted silver. Top half of cake was painted with satin silver lustre dust mixed with rejuvenator spirit. (camera lens too). The camera cake emulates the popular LEICA - M series 240 camera as much as possible . The photo on the back and of the camera cake is an edible ink print photo. Thank you all for your suggestions and assistance.
