Unfortunately I was talked into making a small tiered caking for a friend's casual backyard wedding.  Problem is I cannot attend the wedding & will be out of town.  Wedding cake will be made & stored in fridge? freezer? 4 days before wedding.  She wants roses on this buttercream frosted cake.  Fondant?  Royal?  I have placed royal flowers on buttercream cakes the night before & placed them in the fridge - they softened like buttercream but were good the next day.  Any thoughts?  Suggestions?  I planned on having extras ready for her in case she needs a few the day of & was going to store them in airtight container but wanted to have the cake mostly decorated for her ahead.....

Could you make the roses out of Buttercream? I have made and frozen buttercream roses before as they were easier to transfer to my cake. It might be worth looking into whether it is possible to do that and freeze the decorated cake so that they can pull it out as appropriate to defrost with nothing to do but stack the cake - which if they are able to that frozen (if that is possible) they will be less likely to do any damage to the cake. Hopefully someone with a lot more experience is able to help you out with that one.

Make the cake, put it in a rigid plastic container, freeze it.  The night before the party or the morning of, depending on the time of the party and how big the cake, have them take it out of the freezer and set it on the counter to defrost.  Uncover and serve.  Make a tester to make sure you trust the process and are comfortable with it.  I have done 3 friends graduation cakes this way since I planned to be out of town.  As life would have it, I was there for all three and the cakes were fine.  One had quite a bit left that my friend re-froze.  She defrosted it again and had it for her dads birthday since he liked it so much.
