I've found zillions of chewy cookies that taste great but they're always cakey, I want a gooey chewy cookie

I don't know what kind of cookies you want but the Redpath chocolate chip cookie recipe is the one I use all the time. They are delicious and chewy and I always get rave reviews.
On the ones that I have tried that seem to puff up instead of spreading. I always test one cookie and see how it turns out then I adjust the ingredients in the recipe. The only cakey cookies I like are Madeleines
I'm confused. If you're able to test one cookie, then the dough is already mixed. How do you then adjust the ingredients after this testing?
By adding a little more dark brown sugar into the mixture. Don't mean to confuse anyone, when you say chewy gooey cookies, I atomatically think of chocolate chip cookies. Did you say chocolate chip beach and sweets? No? My bad.
