Is blue velvet just red velvet with blue coloring? And white, the same, leaving out the bit of chocolate? I really tried to avoid ever having to go here. I do have a cake I call white velvet, but I doubt it's what this customer has in mind.

I think she thinks if I make it white and blue, it will taste the same as the red.

AI believe blue velvet Is red velvet recipe with blue food coloring. I am not 100% sure though. I suppose there could be some other recipe now that you mention it...hmm.

My white velvet recipe is called so because it has a "tender, velvety crumb." Yeah...

I have no idea about blue velvet, I would just assume the food coloring as well.

Same here.

This customer wants red, white and blue. I showed them that red velvet cake isn't really that red, in spite of all the red coloring in it and that my apron looks like I've just been present at a violent stabbing after i make it. (I'm kind of a sloppy baker - I try to work really fast lol). If it's just changing up the food coloring and leaving it out, I guess I can do that.

Everything I've googled so far says it's just blue coloring instead of red. Maybe I'll offer this and see if they'll skip the white velvet, which I'm not confident about making. my cakes are 4 layer anyway.

With that much food coloring, it almost certainly has an amusing aftereffect, of the scatological kind.

I remember seeing box mixes on the grocer's shelves for red-and-green velvet cakes, around this past Christmas.

ABlue velvet is just red velvet with blue food coloring. I've made it several times. May be TMI but I do warn people now though that their #2 may be greenish blue after eating. :-)

Not to mention that if the cake sits out for awhile, the blue turns greenish.  We sold blue velvet cupcakes for a time at work and nobody bought any because they all eventually looked moldy because of the food color :o
