I have a 2 layer, 9" chocolate cake (from scratch) that's covered with chocolate ganache, triple wrapped in plastic wrap - frozen on June 21, 2013. Would this still be good, do you think? I'm making a layered cake for my dad's birthday and remembered I had it in the freezer, but not sure I should take the risk!

I forgot to mention I'm planning to cover the layers with fondant. If I were to use the ganache-covered layers, I wondered if there's anything I need to be aware of as I haven't covered ganache with fondant before.

Thanks!

I have used fzn cake that old for family (box mix recipe) and was pleasantly surprised to find it was *almost* as good as fresh baked.

kakeladi I'd hope that cake is still good after a year, as the tradition of freezing the top layer of a wedding cake hasn't been outlawed yet, that I know of.  Yikes!

I would use it for family. I actually had one couple keep one of my cakes in the fridge for a year and then ate it. I wouldn't recommend that any one do that though.

I opted not to use the 'old' cake as the party was family as well as friends. I didn't want to risk it. I'll save it for the next family-only party. Thanks!
