I have been asked to make a suitcases wedding cake using carrot cake to serve 200 guests. I usually use the Lindy Smith portion guide for fruit cake (1 in sq slices) and sponge cake ( 1x2 in slices) but im not sure which category carrot cake falls into when serving at weddings. My carrot cake recipe uses shredded carrot and chopped walnuts so it is nowhere near as dense as my fruit cake. What cutting size do you use when suggesting and pricing for weddings?

I use the one by two for carrot cake , sometimes one by three . I usually give the couple a choice.
