Urgent Help With Cake Please!

Hi!

 

Im making a two tier cake. Once is red velvet covered and filled with cream cheese frosting and the other is a lemon cake filled with lemon curd and covered with white chocolate buttercream.

 

I have to cover it in fondant and decorate it for a delivery tomorrow at 11 am but I'm sure not if these cakes would stay alright outside the refrigerator over night? Will the taste get effected?

 

Im still relatively new to this so don't want to risk making it in the morning unless absolutely necessary incase something is to go wrong.

 

Can i complete my cake(with fondant and decorations) and refrigerate it? or keep it outside in an air conditioned room?

 

Please help with any experience that you have in such a situation.

It depends on your recipes, there are shelf stable curd and cream cheese frosting recipes that are fine to leave out. Most decorator cream cheese frostings seem to have enough sugar in them to prevent bacteria growing.


Others have a 4 hour maximum before bacteria starts to grow. Those 4 hours include every minute the frosting/filling spends outside of the fridge from the moment it is made.
That is according to USA health standards at least, which are of course on the cautious end of thigns, but it's better to be too careful than not careful enough :)
