How To Cover A Gnashed Cake With Fondant?

I am wanting to cover a gnashed cake with fondant but just want to ask a few questions first.  Can I gnash my cake and leave it in the fridge overnight and then cover in fondant is it just best to chill for half an hour or so and then cover? 

Also I know I need to damp the cake with water just before I put on the fondant but is it best to use cold or warm water for this.  I am assuming cold as I guess warm would make the fondant too sticky?

Hi misspink, I'm just about to ganache a cake tonight too. I normally ganache my cakes in the evening, then leave them on the bench overnight to set. In the morning, I brush the cake with a simple sugar syrup, then cover in fondant. The sugar syrup is so easy to make; just one shot glass of caster sugar & 1 shot glass of water & bring to the boil for a few minutes. I use the syrup to brush over the cake layers once they have been torted to keep the cake moist & as an adhesive for the fondant on to the ganache. I'm sure I've used hot water before, just careful it doesnt melt your ganache though. Good luck :)
