I am making my very first wedding cake. The bride would like the bottom tier to be chocolate cake with peanut butter icing and it will be covered with fondant. My question is do I just fill the middle of the cake with PB icing and then cover the rest with just a normal buttercream and then cover it in fondant. Or do I fill the cake with the Pb icing and also cover it with the PB icing and then put the fondant on?? And also...will just plain white fondant taste alright with the PB icing???

yes it should taste fine--
my observation is that i haven't used peanut butter icing much but when i did it spoiled quickly--maybe i'm remembering a peanut butter mousse or something--it was super easy though like cream, sugar and the peanut butter--it didn't go bad overnight but it was within a couple days--surprised me-- and i mean look at reese's cups they are fine at room temp forever assuming they were ever allowed to last that long--but once you encase this in the fondant unless someone smart chimes in and removes all doubt that this is safe--consider testing out your recipe so it performs well under the conditions you'll create--
but it should be delicious with vanilla buttercream and fondant--me, i would fill with the peanut butter flavor then use buttercream to ice it then the fondant
